Preparations


1. The cream

  1. Soften the gelatin in a bowl of cold water (10 minutes)
  2. In a saucepan, heat the cream, sugar, and vanilla. Stop when it begins to simmer.
  3. Off the heat, add the drained gelatin and stir until completely dissolved.
  4. Pour the mixture into glasses, let cool, then refrigerate for at least 4 hours.

2. The coulis

  1. Heat the berries with the sugar and lemon for about 5 minutes.
  2. Blend and strain the coulis.

2. Dressing

  1. When ready to serve, coat the panna cotta with the coulis and garnish with a few fresh fruits.
